Baked Breaded Chicken Breast with Shio-Koji

  1. Stack 2 sheets of aluminium foil and shape into a bowl.
  2. (or use a heatproof bowl.)
  3. Mince the garlic.
  4. Butterfly the chicken breast, and slice diagonally into strips.
  5. Lay the chicken breast in the aluminium foil bowl, and spread the shio-koji.
  6. (Tightly pack the chicken breast.
  7. It's ok to overlap a little bit.)
  8. Mix the ingredients, and spread the mixture on top of the chicken, then swirl in the olive oil.
  9. Bake it for 10-20 minutes in a toaster oven.
  10. If you are using the oven, bake for about 20-30 minutes at 180C (350F), then it's done.
