Shepherds Pie Southwest Style
- 1 pound Ground Beef
- 13 pounds Ground Pork Sausage
- 3 teaspoons Southwest Seasoning Mix, Divided Use
- 1 whole Small Onion, Diced
- 2 cups Mashed Potatoes
- 6 ounces, weight Cream Cheese, Softened
- 8 ounces, weight Can Of Corn, Drained
- 4 ounces, weight Can Of Diced Green Chilis
- 2 cups Shredded Cheddar Cheese
- 2 cups Marinara Sauce Or Substitute A 15 Oz. Can Of Crushed Tomatoes For The 2 Cups Marinara
- Heat oven to 375 F.
- Brown meats in a skillet over medium heat, adding 1 teaspoon of the seasoning mix as you go.
- When meat is almost fully browned, add onion.
- Continue sauteing until meat is done and onion has begun to soften.
- If necessary, drain grease.
- Remove pan from heat and set aside.
- Meanwhile, using a mixer, blend the potatoes and cream cheese in a medium-sized bowl until smooth.
- Set aside.
- In a small bowl, mix corn, green chilies and cheddar.
- In a lightly greased 1 1/2 or 2 quart casserole dish, layer each of the components, sprinkling each layer with some seasoning mix as you go: meat, marinara, corn-cheddar and then potatoes.
- Bake uncovered for 30 minutes.
- Freezes really well.
