Sweet Potato Quesadillas

  1. 1) In a medium bowl, combine beans, 1/4 cup cilantro, lime juice, jalapeno, and ancho chile pepper, set aside.
  2. 2) Boil sweet potato for 15 minutes or until tender.
  3. Remove from heat, drain.
  4. Return potatoes to saucepan; season with cumin and coarsely mash.
  5. 3) Spread sweet potato over half of each tortilla.
  6. Layer bean mixture, spinach, green onion, and cheese.
  7. Fold the tortilla in half over the filling.
  8. 4) Grill over medium heat, two at a time, for 6 minutes or until lightly browned, turning once halfway through.
  9. Repeat with remaining quesadillas.
  10. 5) Optional: Combine cucumber, radishes, and cilantro, use as garnish/topping for the quesadillas.
