Roasted Root Vegetables
- 1 large beet
- 4 large parsnips
- 1 large sweet potato
- 3 small red potatoes
- 1 medium onion
- 2 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 2 tbsp. butter
- Heat oven to 400 degrees F.
- In a bowl, toss vegetables, olive oil, salt, and freshly ground pepper.
- Melt butter in a jelly-roll pan in the oven for 5 minutes.
- Add vegetables to pan; spread out.
- Roast vegetables for 30 minutes.
- Increase oven temperature to 450 degrees F. Stir vegetables and roast 15 more minutes, or until tender and golden.
