Grilled Swordfish with Citrus Salsa

  1. Preheat the grill and the fryer.
  2. Season the fish with the spice.
  3. Place on the grill.
  4. Fry the tortilla strips in the fryer for 3 minutes, drain and season with salt and pepper.
  5. In a small bowl, combine the sections, shallots, zest, olive oil, honey, and cilantro.
  6. Season with salt and pepper.
  7. Remove the fish from the grill.
  8. Set up a nest with the tortilla strips and place the fish on top.
  9. Top with the salsa.
