No-Cream Asparagus Soup

  1. Cook and stir carrots, onions and celery in hot oil in large saucepan on medium-high heat 3 min.
  2. Add broth and water; stir.
  3. Bring to boil.
  4. Stir in asparagus and rice; simmer on medium-low heat 10 to 15 min.
  5. or until vegetables are crisp-tender, stirring frequently.
  6. Add soup, in batches, to blender; blend until smooth.
  7. Return soup puree to pan.
  8. Add milk and cheese; cook 5 min.
  9. or until heated through, stirring occasionally.
