Easy and Flavorful Japanese Soup Stock (Dashi)
- 1 sheet Kombu
- 1 two handfuls Bonito flakes
- 2000 ml Water
- Put konbu in water and heat it up.
- Remove konbu before the water comes to a boil.
- Put bonito flakes into the warm water.
- Bring to a boil and skim off the scum that rises to the surface.
- Strain through a cheesecloth or similar placed on a colander and it's done.
