Chicken Breast Stuffed With Spinach and Feta
- 4 chicken breasts
- 3 tablespoons minced garlic
- 14 large sweet onion, chopped
- 4 cups fresh spinach
- 12 cup feta, crumbled (or amount desired)
- 4 tablespoons extra virgin olive oil
- Slice chicken breasts on the side, lengthwise creating a pocket to stuff the spinach mixture inside.
- Set aside.
- Pour 2 TBS olive oil in large saute pan, turn heat on medium.
- Saute onions and 2 TBS garlic in pan until onions are clear, then add spinach.
- Leave spinach on top of onions and garlic, cover with lid and let cook until spinach is steamed and well cooked.
- Then mix spinach in with onion and garlic mixture, saute for another minute.
- Turn off burner.
- Fold feta cheese into spinach mixture.
- Stuff the spinach, garlic, onion, feta mixture into each chicken breast until full.
- Close the side of chicken breast with 1 or 2 toothpicks making sure that none of the stuffing will come out.
- Next add 2 TBS olive oil to large saute pan and 1 TBS minced garlic on high heat.
- Saute chicken breasts in saute pan for about 3 minutes each side until they start to turn brown.
- Then put all the chicken breasts in a glass baking dish and bake at 350 degrees for about 20 minutes.
- Makes 4 servings.
