Company-Style Steak

  1. Spread mustard evenly over both sides of steaks.
  2. In a large skillet, heat 1 tablespoon oil over medium heat.
  3. Add steaks; cook to desired doneness, turning once.
  4. (Allow 7 to 10 minutes for medium-rare or 10 to 12 minutes for medium).
  5. Transfer steaks to a serving platter; keep warm.
  6. Add remaining oil to skillet drippings.
  7. Add mushrooms; cook and stir 4 minutes.
  8. Stir in wine, Worcestershire sauce, and thyme.
  9. Simmer, uncovered, 3 minutes.
  10. Combine broth and cornstarch, stir into mushroom mixture.
  11. Cook and stir until thickened and bubbly.
  12. Cook and stir 2 minutes more.
  13. Spoon over steaks.
