Chile Lemon Roasted Broccoli
- 1 lb fresh broccoli
- 1 red jalapenos or 1 fresno chile or 14 teaspoon red pepper flakes
- 1 lemon
- 2 tablespoons olive oil
- 14 teaspoon salt
- Preheat oven to 425.
- Cut broccoli into florets.
- Remove stem and seeds and finely slice the chile.
- Cut 4 strips of zest from the lemon.
- In a roasting pan, toss broccoli, chile, and lemon zest with the oil.
- Spread into a single layer and sprinkle with the salt.
- Roast until broccoli is tender and starting crisp on its edges.
- Halve zested lemon and squeeze fresh juice (about a tablespoon) over cooked broccoli.
