Coconut cookies
- 150 grams all purpose flour
- 120 grams unsalted butter @ room temperature
- 1 egg
- 60 grams granulated sugar
- 70 grams brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 75 grams unsweetened coconut flakes
- Mix flour, baking soda and salt.
- Beat butter, sugar and brown sugar until creamy, about 3-5 minutes Add egg.
- Beat until the mixture is smooth.
- Slowly add the flour to the mixture, mix well.
- Then add coconut flakes
- Wrap the dough with plastic wrap and refrigerate for about 30 minutes to 1 hour.
- Preheat the oven at 340F.
- Role the dough into balls (about 1 tbsp)
- Bake at 340F for 15 minutes.
- Leave the cookies on a cooling rack until completely cool off.
