Open-Face Huevos Rancheros
- 1 Tbsp. oil
- 1 small onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 1 can (14 fl oz/389 mL) no-salt-added black beans, rinsed
- 3/4 cup salsa
- 4 eggs, beaten
- 4 small flour tortilla, warmed
- 1 cup Touch of Philadelphia Shredded Creamy Mexicana Cheese
- 1/4 cup chopped fresh cilantro
- Heat oil in medium skillet on medium heat.
- Add onions; cook and stir 5 min.
- or until crisp-tender.
- Add beans and salsa; cook 3 to 5 min.
- or until heated through, stirring frequently.
- Meanwhile, cook eggs in skillet sprayed with cooking spray 5 min.
- on medium-low heat or until set, stirring occasionally.
- Place tortillas on serving plates; top with bean mixture, eggs, cheese and cilantro.
