Barley Honey Muffins Recipe
- 2 c. barley flour
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1/4 c. canned lowfat milk
- 2 Tbsp. oil
- 2 Tbsp. honey
- 1 tsp vanilla
- 2 x Large eggs
- 1/2 c. brown sugar
- Combine lowfat milk, oil, honey and vanilla.
- Add in beaten Large eggs and sugar.
- Mix well.
- Sift dry ingredients and add in to wet mix.
- Mix will have consisitency of cookie dough.
- Place into greased muffin tins.
- Bake 400 for 20 min.
- Makes 12Note: some rasisns or possibly dates may be added to the mix.
