Sausage and Spinach Stuffed Pasta Shells
- 18 Jumbo pasta shells
- 1 lb Pork sausage, with casing removed.
- 1 tbsp Minced garlic
- 1 can Chopped tomatoes
- 1 cup Finely chopped spinach
- 1/2 cup Ricotta cheese
- 1/2 cup Grated mozzarella cheese
- 1 Salt and pepper to taste
- Pre heat oven to 175C (Fan Oven), and fill a large bowl with cold water and ice.
- Bring a large pot of salted water to a boil.
- Add pasta shells and cook according to package directions.
- Drain well then add to ice water until ready to stuff.
- Remove the casing from the sausage links.
- Just use a sharp knife to pierce the casing and peel it off the meat.
- Heat a large frying pan over medium-high heat.
- Add pork sausage then use a wooden spoon to break up the sausage, cook for 5-6 minutes until browned.
- Add garlic and cook for 30 seconds then add tomatoes and spinach, cook for 1 minute.
- Remove pan from heat and stir in ricotta cheese.
- Using a spoon, fill pasta shells with pork filling and arrange in a baking dish.
- Sprinkle tops with mozzarella cheese then bake in the oven for 25-30 minutes or until cheese has melted and tips of shells begin to crisp and brown.
