Lilhpster's Vegan Broccoli & Tomato Pasta
- 1 cup broccoli florets
- 5 halved cherry tomatoes
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 15 oz vegetable broth
- 1 tsp onion powder
- 1 1/2 cup dry rotini pasta
- 1 dash crushed red pepper
- 1 dash nutritional yeast
- Warm the oil in a skillet over medium heat.
- Add broccoli, tomatoes, and garlic.
- Turn the heat up to medium-high and sautee until the broccoli just begins to get soft.
- Add vegetable broth and onion powder.
- Turn the heat up to high and bring to a boil.
- Add pasta and simmer for 15 minutes or until pasta becomes soft.
- Let it cool a bit.
- Serve it in a bowl and sprinkle red pepper and nutritional yeast to taste.
