Cinna Raisin Bread

  1. Preheat oven to 350F.
  2. Grease and flour or spray an 8 1/2" x 4 & 1/2" loaf pan.
  3. Soak raisins in apple juice.
  4. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, oats, and brown sugar.
  5. Add applesauce, oil, flax slurry, and soymilk.
  6. Stir until just combined.
  7. Mix in raisins and juice.
  8. Pour batter into prepared pan.
  9. Bake for 50 - 60 minutes, or until a knife comes out clean.
  10. Remove from pan and let cool.
