Speedy Side Dish! Bok Choy and Egg Stir Fry with Ginger

  1. Wash the bok choy well, and cut into 3 even lengths.
  2. Cut the bottom parts into 6-8 even pieces.
  3. Julienne the ginger.
  4. Beat the eggs, add a small amount of salt, pour into a frying pan with heated vegetable oil, and stir.
  5. Remove from the pan while they are still halfway cooked.
  6. Add a little bit more oil into the same pan, and add the ginger as well.
  7. When fragrant, add the bok choy, and stir-fry over medium heat.
  8. When the boy choy is coated with the oil, add the chicken stock powder and water.
  9. Cover with a lid, and steam-fry for about 1 minute.
  10. Remove the lid.
  11. Return the Step 2 eggs to the pan and mix quickly.
  12. Taste it and adjust the flavour with salt and pepper.
  13. Swirl in the sesame oil at the end if you like.
