Speedy Side Dish! Bok Choy and Egg Stir Fry with Ginger
- 2 bunches Bok choy
- 2 Eggs
- 1/2 thumbtip's worth Ginger (julienne)
- 1/2 tsp Chicken stock powder
- 2 tbsp Water
- 1 dash Salt
- 1 dash Pepper
- 1 Vegetable oil
- 1/2 tsp *Sesame oil (optional)
- Wash the bok choy well, and cut into 3 even lengths.
- Cut the bottom parts into 6-8 even pieces.
- Julienne the ginger.
- Beat the eggs, add a small amount of salt, pour into a frying pan with heated vegetable oil, and stir.
- Remove from the pan while they are still halfway cooked.
- Add a little bit more oil into the same pan, and add the ginger as well.
- When fragrant, add the bok choy, and stir-fry over medium heat.
- When the boy choy is coated with the oil, add the chicken stock powder and water.
- Cover with a lid, and steam-fry for about 1 minute.
- Remove the lid.
- Return the Step 2 eggs to the pan and mix quickly.
- Taste it and adjust the flavour with salt and pepper.
- Swirl in the sesame oil at the end if you like.
