Cold Weather Chili
- 1 1/2 pounds beef chuck lean, cut in 1/2 in pieces or cubes
- 2 tablespoons vegetable oil
- 2 tablespoons flour, all-purpose
- 1 each sweet red bell peppers green pr red, medium size, chopped
- 1 cup onions chopped
- 1 tablespoon garlic minced
- 1 1/2 cups beef stock
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin ground
- 1 tablespoon chili powder hot or mild
- 1/2 teaspoon salt
- 1 cup tomato sauce
- 1/2 ounce chocolate unsweetened, coarsley chopped
- Heat oil in a Dutch oven or large heavy duty skillet.
- Sprinkle the meat with flour, and brown meat in oil.
- Add a little extra olive oil to the browned meat.
- If need to finish.
- Stir in the onions, green peppers, and garlic.
- Cook until set.
- Stir in the beef broth, oregano, cumin, chili powder and salt.
- Bring to a boil and reduce heat, then reduce heat and simmer, uncovered to for 45 mins.
- Stir in tomato sauce and chocolate.
- Simmer, uncovered 25 to 30 minutes until thick.
