Lentil Soup
- 2 quarts water
- 1 large smoked pork hock
- 1 lb dried brown lentils
- 1 cup finely chopped onion
- 12 cup finely chopped celery
- 12 cup finely chopped carrot
- 2 teaspoons sugar
- 2 teaspoons beef bouillon granules
- 14 teaspoon dry mustard
- 12 teaspoon dried thyme leaves
- salt and cayenne pepper
- Combine all ingredients except salt and pepper in slow cooker.
- Cover and cook on low for 6-8 hours.
- Discard pork hock; season to taste with salt and pepper.
