Best-Ever Almond Cookies

  1. Heat oven to 350 degrees F.
  2. Beat butter and sugar in large bowl with mixer until light and fluffy.
  3. Add egg, nuts, salt and extract; mix well.
  4. Gradually add flour, beating until blended after each addition.
  5. Roll into 42 (3/4 inch) balls.
  6. Place, 2 inches apart, on baking sheets.
  7. Flatten slightly with fork.
  8. Bake 12 min.
  9. or until lightly browned.
  10. Let stand on baking sheets 1 min.
  11. Transfer to wire racks; cool completely.
