Spaghetti Vongole
- 200 grams spaghetti
- 2 tbsp Extra Virgin Olive Oil
- 2 each garlic cloves
- 1 large shallot
- 1/4 tsp dried red chilli
- 400 grams clams
- 1 tbsp chopped parsley
- 2 tbsp white wine
- 25 grams unsalted butter
- Cook spaghetti in boiling water for 10 mins
- chiop shallot and soften in oil with crushed garlic and dried chilli for 2 - 3 minutes
- add clams, parsley and wine and cook for a further 4 - 5 mins
- serve over the cooked spaghetti
