Grilled Chicken and Avocado Pitas

  1. In a small bowl, combine the wasabi paste, soy sauce, vinegar, and mayonnaise.
  2. Refrigerate until ready to use.
  3. Sprinkle salt and pepper on both sides of chicken breasts.
  4. Cook chicken on a preheated grill over medium-high heat about 6 minutes per side until fully cooked, with the lid down.
  5. Remove from grill.
  6. Toast your pita breads until tender and heated, about 1 minute.
  7. If you leave them too long the pita will turn crispy.
  8. Cut chicken into 1 inch cubes.
  9. Cut pita rounds in half and spread some wasabi mayo on both of the insides.
  10. Fill each pita half equally with green leaf lettuce, chicken, avocado, and tomatoes.
