Fish in Foil
- 1 pound fish fillets divided
- 3 tablespoons lemon juice
- 1/4 teaspoon paprika
- 4 ounces onions sliced, divided
- 1 teaspoon parsley leaves chopped
- 1 teaspoon chives chopped
- 6 ounces potatoes peeled, cut, divided
- 1 x salt and black pepper
- 2 teaspoons margarine
- Place 1/2 of fish fillets on a piece of foil.
- Sprinkle each with lemon juice and paprika.
- Place 1/2 of the onion slices on each fillet.
- Combine parsley and chives.
- Roll potato in parsley mixture.
- Arrange 1/2 potato sticks around each fillet.
- Season each with salt and pepper.
- Fold foil and secure tightly.
- Bake 325F (160C).
- for 40 minutes.
- Open foil and dot each with 1 teaspoon margarine.
