Cheesy Smashed Potatoes

  1. Cook vegetables in boiling water in large saucepan on medium heat 20 min.
  2. or until tender.
  3. Drain; return to pan.
  4. Add sour cream; mash until vegetable mixture is light and fluffy.
  5. Stir in cheese.
