Broiled Scallops With Sweet Lime Sauce

  1. Preheat the broiler.
  2. Position the rack 4 inches from the heat source.
  3. Cover a broiler pan or cookie sheet with aluminum foil.
  4. Spray generously with cooking spray.
  5. In a large bowl, whisk together the honey, lime juice and oil.
  6. Add the scallops and toss gently to coat with the honey mixture.
  7. Arrange the scallops in a single layer on the prepared broiler pan or baking sheet.
  8. Broil until opaque throughout when tested with a tip of a knife, about 5 minutes.
  9. Turn the scallops over and broil for another minute.
  10. Divide the scallops onto 4 warmed plates.
  11. Pour any juices from the broiler pan or baking sheet over the scallops.
  12. Sprinkle with grated lime peel and serve with a lime wedge.
