Rapini All Pizzaiola
- 2 tablespoons extra virgin olive oil
- 2 medium garlic cloves
- 1 cup fresh tomato, diced
- 500 g rapini, blanched
- 1 tablespoon oregano
- 1 ounce white wine (optional)
- 1 lemon juice
- salt and pepper
- In a pan heat oil and garlic in a medium skillet over medium heat until garlic begins to sizzle, add diced tomatoes, oregano, salt, white wine and saute for 1 minute.
- Add blanched Rapini, and bring to a simmer.
- Add lemon juice and cook for a few more minutes until Rapini are tender stirring occasionally, and serve.
