$25,000 Chili Recipe
- 3 med Onions, diced
- 2 med Green peppers, diced
- 2 lrg Stalks celery, diced
- 2 x Cloves (small) garlic, chopped
- 1/2 x Fresh Jalapeno peppers,
- 8 lb Lean chuck, grnd coarsely
- 1 can (7-ounce) diced green chilies
- 1 can (14.5-ounce) stewed tomatoes
- 1 can (15-ounce) tomato sauce
- 1 can (6-ounce) tomato paste
- 6 ounce Chili pwdr Tabasco sauce to taste
- 12 ounce Beer
- 12 ounce Mineral water, bottled
- 2 x -(up to)
- 3 x Bay leaves, your choice Garlic salt to taste Salt/pepper to taste
- Dice and saute/fry first 5 ingredients.
- Add in meat and brown.
- Add in everything else, including 1/2 can beer.
- (Drink the remainder, according to Annie).
- Add in water JUST TO COVER TOP.
- Cook about 3 hrs on low heat.
- Stir often.
- Remove bay leaves.
- Couple of notes: Better the 2nd day, if you can wait which long.
- Also, those I substitute pure New Mexico grnd red chili.
- Whatever you use make sure it's pure chili pwdr, no additional seasonings added.
