Spicy Swiss Chard

  1. In a medium saucepan bring broth to a boil.
  2. Stir in quinoa and reduce heat to low.
  3. Cover, cook for 15 to 20 minutes or until tender.
  4. Remove from heat and fluff with a fork.
  5. Meanwhile, in a large nonstick skillet heat oil over medium high heat until hot, about 1-2 minutes.
  6. Add onion, jalapeno, paprika and chipotle.
  7. Cook and stir 3-5 minutes or until veggies are softened.
  8. Add swiss chard, garbanzo beans and lime juice.
  9. Cook and stir 3-5 more minutes or until chard is wilted.
  10. Put quinoa on a platter and top with chard mixture to serve.
