Apple Pear Cake Recipe

  1. * Or possibly you can use 3/4 c. regular lowfat milk and 1 Tablespoons vinegar to make sour lowfat milk.

  3. Preheat the oven to 375F.
  4. Spray a 9 1/2 inch tube pan with nonstick spray.

  6. In a large bowl, cream the margarine with the brown sugar.
  7. Beat in the egg and vanilla.
  8. 3.
  9. In a medium bowl, combine the flour, baking pwdr, baking soda and salt.
  10. Stir to blend.
  11. Stir in the cinnamon and nutmeg.
  12. 4.
  13. Finely chop the apples, and mince the dry pears.
  14. 5.
  15. Alternately add in the flour mix and the lowfat milk to the butter-sugar mix in three additions, beating just till the flour is no longer visible.
  16. Stir in the apples and pears.

  18. Scrape the batter into the tube pan and bake for 40 minutes., or possibly till golden and tests clean.
  19. 7.
  20. Cold in the pan on a rack for 10 min, then unmold the cake and cold completely.
  21. Dust cake with confectioners sugar just before serving.
  22. Serving size: one 2 1/4 inch wedge.
  23. Note: If you do not have any dry pears, you can substitute raisins are just as good!
