TX's Style ~ Scrambled Eggs w/ Tortilla Chips
- 6 Eggs
- 1/2 tbsp Coconut oil
- 2 tbsp Jalapeno pepper - minced
- 1/3 cup Sweet onion - minced
- 1/3 cup Yellow or red bell pepper - minced
- 1/2 cup Cherry tomatoes - minced
- 1 Hand full of Tortilla chips - crushed
- 3 tbsp Club soda
- 1 cup Monetary Jack Cheese - grated
- 1 Key Lime - cut into quarters - or substitute with a lime
- Saute onion, bell pepper and jalapeno in coconut oil
- Add tomatoes - saute for about 2 - 3 minutes
- Add crushed tortilla chips - saute for an additional 3 - 4 minutes
- While you are sauteing - place eggs into a blender bottle with wire insert - shake 6 times (you can use a bowel and wisk, what ever is handy)
- Right before you are going to cook the eggs - add club soda to the eggs and shake 3 more times
- Add eggs to skillet and stir until eggs are cooked the way you like them
- Remove from stove, add salt ~n~ pepper to taste, stir again
- Immediately scoop eggs on plate, add pepper jack cheese and squeeze 1/4 slice of key lime over top
