Sweet and Hot Fried Onion Rings
- 2 12 cups all-purpose flour
- 12 cup cornstarch
- 14 cup sugar
- 2 tablespoons baking powder
- 18-14 teaspoon ground red pepper (or to taste)
- 2 teaspoons salt (or to taste)
- 2 cups club soda
- vegetable oil (for frying)
- 2 large sweet onions, cut into 3/8-inch slices, and separated into rings
- In a large bowl, combine the flour, cornstarch, sugar, baking powder, ground red pepper and salt; whisk in the club soda until combined.
- In a large saucepan, heat 2-inches of oil over medium heat until hot but not smoking.
- Dip each onion ring into batter, allowing the excess batter to drip back into the bowl.
- Fry a few rings a a time for 5-6 minutes, or until golden brown (turning the rings to fry on both sides).
- Drain on a paper towel platter before serving.
- Delicious!
