Country Steak Diane

  1. Grill steaks until cooked through (160F).
  2. Remove from heat; keep warm.
  3. Saute shallots in butter in large skillet until tender.
  4. Add wine; cook and stir until pan is deglazed.
  5. Simmer until liquid is reduced by half, stirring frequently.
  6. Add cream and mustard; mix well.
  7. Bring to a simmer; cook until sauce is of desired consistency, stirring frequently.
  8. Stir in parsley and salt.
  9. Spoon sauce over steaks just before serving.
