Marinated Artichoke Hearts With Mushrooms Recipe
- 2 (9 ounce.) Packages frzn artichoke hearts
- 3/4 c. salad oil
- 1/2 c. lemon juice
- 1 tbsp. sugar
- 2 teaspoon salt
- 1 teaspoon dry mustard
- 1/2 teaspoon pepper
- 1/2 teaspoon dry basil
- 1 sm. clove garlic, crushed
- 1 pound mushrooms, sliced
- 2 tbsp. diced pimento
- Day ahead: Prepare frzn artichokes as label directs; drain well.
- In large bowl, mix salad oil with next 7 ingredients, till blended; stir in artichoke hearts, mushrooms and pimento.
- Cover; chill, tossing occasionally.
- Makes 8 servings.
- About 115 calories per serving.
