Tuna in rolled ted pepper
- 3 Red peppers
- 7 oz Tuna
- 2 tbsp Lemon juice
- 3 tbsp olive oil
- 6 Green or black olives
- 2 Chopped parsley
- 1 clove Garlic, minced
- 1 Celery stick
- Roast the peppers
- Remove from heat and cool 5 minutes
- Remove seeds and membranes and cut into quarters
- Flake tuna, combine lemon juice and oil.
- Stir in olives, parsley, garlic and celery.
- Season with salt and pepper.
- Last pepper skin side down, divide tuna mixture among peppers, spread it evenly and roll sushi style.
- Refrigerate for an hour, remove and cut into sushi sized rolls
