Flat Kiddy Tacos
- 20 corn tortillas
- 1 lb ground meat
- 1 can refried black beans
- 1 medium white onion
- 1 bunch cilantro
- 1 head lettuce
- 1 large tomato
- 1 cup vegetable oil
- 1 packages shredded cheese
- 1/4 cup lime juice
- 1 oz bacon bits
- 2 clove garlic
- mince onion, garlic, cilantro, and mix with a splash of vegetable oil.
- heat in medium pot over medium heat and add refried black beans.
- add lime juice after simmering beans for 5 minutes.
- continue to simmer on low heat, covered, stirring frequently to prevent burning.
- brown ground meat as desired.
- remove from heat and drain well.
- in sauce pan, heat enough oil to cover the bottom.
- place corn tortilla in pan and cook until bubbly then flip.
- once the edges of the tortilla are crispy, remove and drain on paper towel lined plate.
- cook remaining tortillas the same way gradually adding more vegetable oil as needed.
- after cooking allow 20 minutes for tortillas to cool.
- chop tomatoes and lettuce.
- assemble tortillas: layer beans, meat, chopped lettuce, tomatoes, and top with cheese.
- cut tortillas in half and serve.
- for adults, try adding crushed red pepper flakes, 1 clove of garlic (minced), and 1/2 yellow onion to the meat as it cooks.
- when layering tortilla toppings, add beans, meat, sour cream, lettuce, tomatoes, sliced avacado, and cheese.
