Spicy Salmon Tartar with Asian Pears and 2 Vinegar Syrup

  1. In a chilled bowl, toss everything together.
  2. Check for seasoning.
  3. Mold tartar in small "O" rings-2 1/2-inches, or small ramekins.
  4. Garnish with syrup and chives.
  5. In a non reactive pan, slowly reduce both vinegars by about 70 percent until a syrup consistency is achieved.
  6. Keep in mind it will thicken as it cools.
