Easy Twice Baked Potatoes Recipe
- 5 lg. potatoes
- Lowfat milk
- 1/4 c. butter
- 1/4 c. lowfat sour cream
- 1/4 c. cottage cheese
- 1/2 c. grated cheese
- Bacon bits
- Chives, minced
- Salt & pepper
- Boil potatoes till soft.
- Drain water.
- Beat and add in lowfat milk till consistency of mashed potatoes.
- Add in butter, lowfat sour cream, cottage cheese, salt and pepper.
- Place in greased casserole.
- Top with grated cheese.
- Sprinkle bacon bits and minced chives over top.
- Bake at 325 degrees for 20 min (till cheese melts).
