Hungarian Turkey Burgers Studded with Smoked Gouda

  1. Heat a large nonstick skillet or grill pan over medium-high heat.
  2. In a large bowl mix the turkey with the onion, bell pepper, parsley, Worcestershire, smoked paprika, salt, and pepper.
  3. Fold in the chopped smoked Gouda.
  4. Score the meat with your hand into 4 sections.
  5. Form each section into a large patty 1 inch thick.
  6. Drizzle the patties with EVOO and cook for 6 minutes on each side, until cooked through.
  7. While the burgers cook, mix the watercress, shallot, and sour cream in a small bowl.
  8. Season the thick sauce with salt to taste.
  9. To serve, place 2 lettuce leaves on each slice of bread.
  10. Top with a burger.
  11. Top burgers with some sauce and serve with a few celery sticks and radishes on the side for munching (theyre good with the sauce, too).
