Apple Crunch Muffins Recipe
- 1 c. Apples, pared, coarsely minced, 1 medium
- 1 tsp Lemon juice
- 1 1/2 c. Flour
- 1 c. Whole wheat flour
- 1/4 c. Sugar
- 1/4 c. Packed dark brown sugar
- 4 tsp Baking pwdr
- 1/2 tsp Salt
- 1 c. Lowfat milk
- 1 x Egg
- 1/4 c. Margarine, melted
- 2 Tbsp. Sugar
- 1/2 tsp Cinnamon
- Preheat oven to 400 F. Grease 14-16 muffin c.. Toss apple with lemon juice in small bowl.
- Stir together flour, whole wheat flour, sugar, brown sugar, baking pwdr and salt till well mixed.
- Whisk lowfat milk, egg and melted margarine.
- pour over flour mix.
- Add in apples.
- Gently stir just to moisten.
- Spoon into prepared muffin pans.
- Combine sugar and cinnamon.
- Sprinkle over dough.
- Bake at 400 F. for 20-25 min.
- Remove from c..
- Cold on wire rack.
- Reheat at 325 F .
- for a few min.
