Dora's Jerk Pork Chops

  1. Preheat oven to 350 degrees F.
  2. Slice pork loin into chops about 3/4-inch-thick.
  3. Coat lightly with House Seasoning and seasoning salt.
  4. Coat with Jerk Spice, being sure to cover all sides.
  5. Bake until cooked through, about 30 minutes.
  6. 1 cup salt
  7. 1/4 cup black pepper
  8. 1/4 cup garlic powder
  9. Mix ingredients together and store in an airtight container for up to 6 months.
  10. Yield: 1 1/2 cups
  11. 1 tablespoon kosher salt
  12. 1 teaspoon ground allspice
  13. 1 teaspoon brown sugar
  14. 1 teaspoon garlic powder
  15. 1 teaspoon onion powder
  16. 1/2 teaspoon dried, crushed Scotch bonnet pepper
  17. 1/2 teaspoon paprika
  18. 1/2 teaspoon dried chives
  19. 1/2 teaspoon ground nutmeg
  20. 1/2 teaspoon freshly ground black pepper
  21. 1/2 teaspoon ground ginger
  22. 1/4 teaspoon ground cinnamon
  23. 1/4 teaspoon ground cloves
  24. 1/4 teaspoon dried thyme
  25. Combine all ingredients in a bowl until well-mixed.
  26. Store in an airtight container.
  27. Yield: 1/2 cup
