Pumpkin White Chocolate Cookies

  1. In a large bowl, cream butter and sugars until light and fluffy.
  2. Beat in the egg, vanilla and pumpkin.
  3. Combine dry ingredients; gradually add to the creamed mixture and mix well.
  4. Stir in white chocolate chips.
  5. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.
  6. Bake at 350 for 12-14 minutes or until firm.
  7. Remove to wire racks to cool.
