Pumpkin White Chocolate Cookies
- 1 cup butter, softened
- 12 cup sugar
- 12 cup packed brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1 cup pumpkin (not pie filling)
- 2 cups all-purpose flour
- 3 12 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 14 teaspoon salt
- 11 ounces white chocolate chips
- In a large bowl, cream butter and sugars until light and fluffy.
- Beat in the egg, vanilla and pumpkin.
- Combine dry ingredients; gradually add to the creamed mixture and mix well.
- Stir in white chocolate chips.
- Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.
- Bake at 350 for 12-14 minutes or until firm.
- Remove to wire racks to cool.
