Minestrone Soup
- 1/2 lb. extra lean ground beef
- 1 onion, diced
- 2 (15 oz.) cans tomatoes
- 2 c. chopped Swiss chard
- 2 c. beef broth
- 1 (16 oz.) can kidney beans
- 1 (16 oz.) garbanzo beans
- 1 (16 oz.) can green beans
- 1 c. dry small shell macaroni
- 2 c. water
- 1 tsp. Italian seasoning
- 1 tsp. salt
- grated Parmesan cheese (optional)
- Do not drain tomatoes or beans.
- In Dutch oven, brown meat and onion; add tomatoes and Swiss chard; cover and simmer 10 minutes. Add broth, beans, water, macaroni (dry), Italian seasoning and salt.
- Cover and simmer until macaroni is tender.
- Serve with Parmesan cheese sprinkled on top.
- Serves 6.
