Delightful Lemon Mousse with Strawberry Sauce
- 1-1/2 cups boiling water
- 1 pkg. (8-serving size) JELL-O Lemon Flavor Sugar Free Gelatin
- 2 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- ice cubes
- 1 cup cold apple juice
- 1 tub (8 oz.) COOL WHIP FREE Whipped Topping, thawed
- 1 bag (10 oz.) frozen strawberries, thawed, pureed
- Stir boiling water into combined gelatin and lemon zest in large bowl at least 2 minutes until gelatin is completely dissolved.
- Add enough ice cubes to the apple juice to measure 1-3/4 cups.
- Add to gelatin; stir until slightly thickened.
- Add whipped topping; stir with wire whisk until well blended.
- Pour 1/2 of the strawberry sauce evenly into 10 dessert dishes; cover with gelatin mixture.
- Top with remaining strawberry sauce.
- Refrigerate 4 hours or until firm.
