Delightful Lemon Mousse with Strawberry Sauce

  1. Stir boiling water into combined gelatin and lemon zest in large bowl at least 2 minutes until gelatin is completely dissolved.
  2. Add enough ice cubes to the apple juice to measure 1-3/4 cups.
  3. Add to gelatin; stir until slightly thickened.
  4. Add whipped topping; stir with wire whisk until well blended.
  5. Pour 1/2 of the strawberry sauce evenly into 10 dessert dishes; cover with gelatin mixture.
  6. Top with remaining strawberry sauce.
  7. Refrigerate 4 hours or until firm.
