Simmered Atsuage and Green Beans

  1. Cut off the ends off the green beans, the cut them into 3 even lengths.
  2. Cut the atsuage into bite-sized pieces, and pour over boiling water to drain the excess oil.
  3. Add all the ingredients into a pot, and bring to a boil, then add in the Step 1 ingredients.
  4. Bring to a boil again.
  5. Place a small, light lid that sits right on top of the food (otoshibuta) and simmer for 10 minutes over medium heat.
  6. Remove the small lid, and continue simmering for about 5 minutes over low heat.
  7. Please be careful not to evaporate the broth completely.
  8. And you're done.
  9. This is 'Ganmodoki' (small deep-fried fritters made of tofu and various ingredients) & Green Beans.
  10. This is also delicious.
