Simmered Atsuage and Green Beans
- 240 grams Atsuage
- 140 grams Green beans
- 300 ml Dashi stock
- 2 tbsp Sugar
- 1 1/2 tbsp Soy sauce
- Cut off the ends off the green beans, the cut them into 3 even lengths.
- Cut the atsuage into bite-sized pieces, and pour over boiling water to drain the excess oil.
- Add all the ingredients into a pot, and bring to a boil, then add in the Step 1 ingredients.
- Bring to a boil again.
- Place a small, light lid that sits right on top of the food (otoshibuta) and simmer for 10 minutes over medium heat.
- Remove the small lid, and continue simmering for about 5 minutes over low heat.
- Please be careful not to evaporate the broth completely.
- And you're done.
- This is 'Ganmodoki' (small deep-fried fritters made of tofu and various ingredients) & Green Beans.
- This is also delicious.
