sig/*ari* white asparagus with two sauces
- 400 grams canned white asparagus
- 125 ml olive oil
- 3 tbsp fresh lemon juice or white wine vinegar
- 1 pinch salt and freshly ground black pepper
- 2 ripe tomatoes,skinned and seeded
- 1 tbsp chopped Spanish onion
- 1 pinch chilli or cayenne pepper
- 2 tsp chopped fresh parsley
- Drain asparagus well and put into dish.For the vinaigrette, mix oil lemob juice or vinegar and salt and pepper in a small jug.For the tomato salsa chop tomato into small pieces ,mix in chopped onions and parsley and season with a little salt ,the chilli or cayenne pepper.
- Arrange on plate with the two sauces.
