Herbed Feta Salad

  1. Preheat oven to moderate 180C (350F/ Gas 4).
  2. Remove crust from bread and cut bread in cubes.
  3. Place on an oven tray in a single layer; bake for 10 minutes, or until crip and lightly golden; cool completely.
  4. Cut feta into small cubes; place in a bowl.
  5. Combine garlic, marjoram, chives, basil, vinegar and oil in small screw-top jar and shake for 30 seconds.
  6. Pour over feta and cover with plasic wrap.
  7. Leave for at least 30 minutes, stirring occasionally.
  8. Wash and dry lettuces.
  9. Tear leaves into pieces and place in a bowl.
  10. Add feta with dressing, and bread cubes; toss.
