Herbed Feta Salad
- 2 slices thick white bread
- 200 g (6 1/2 oz) feta cheese
- 1 clove garlic, crushed
- 1 tablespoon finely chopped fresh marjoram
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon finely chopped fresh basil
- 2 tablespoons white wine vinegar
- 1/3 cup (80 ml/2 3/4 fl oz) olive oil
- 1 head red coral lettuce
- 1 head butter, coral or oak-leaf lettuce
- Preheat oven to moderate 180C (350F/ Gas 4).
- Remove crust from bread and cut bread in cubes.
- Place on an oven tray in a single layer; bake for 10 minutes, or until crip and lightly golden; cool completely.
- Cut feta into small cubes; place in a bowl.
- Combine garlic, marjoram, chives, basil, vinegar and oil in small screw-top jar and shake for 30 seconds.
- Pour over feta and cover with plasic wrap.
- Leave for at least 30 minutes, stirring occasionally.
- Wash and dry lettuces.
- Tear leaves into pieces and place in a bowl.
- Add feta with dressing, and bread cubes; toss.
