Mincemeat With Green Tomato
- 1 lb stew beef chunk, minced
- 12 cup suet (optional)
- 20 green tomatoes, cored
- 18 tart apples, peeled
- 1 12 lbs raisins
- 3 tablespoons cinnamon
- 34 cup sweet fruit juice
- 34 cup citron, Minced
- 6 tablespoons orange rind
- 3 teaspoons salt
- 1 tablespoon clove
- 1 12 teaspoons allspice
- 1 teaspoon ginger
- 1 cup beef stock
- brandy, if desired
- 1 teaspoon nutmeg
- Cover meat with water and simmer until tender.
- Force meat, suet, tomatoes and apples through food processor until it is in smallish pieces.
- Place in a large saucepan and add remaining ingredients (except brandy) and simmer 1 hour, stirring frequently.
- Fill 3 hot, sterilized 1-quart jars.
- Place 2 tablespoons brandy on top, if desired.
- Seal.
- Store in cool place.
- Makes a wonderful minced pie!
