Tuscan Parmesan Pillows
- 1 12 lbs ground beef round
- 3 garlic cloves, crushed
- 12 teaspoon salt
- 14 teaspoon fresh coarse ground black pepper
- 1 cup grated parmesan cheese
- 13 cup chopped parsley
- 1 tablespoon olive oil
- 1 tablespoon butter
- 13 cup chopped parsley
- lemon wedge
- Mix meat-mixture ingredients until well blended.
- Shape into twelve 1 1/4-inch thick patties.
- Let stand 15 minutes.
- Heat oil and butter in a large heavy nonstick skillet over medium-high heat.
- Add patties and cook until well browned on both sides and no longer pink in centers, about 5 minutes each side.
- Sprinkle with remaining parsley.
- Serve with lemon wedges to squeeze over the patties.
- Serves 6.
