Potato Chili-Cheese Soup

  1. Clean potatoes; chop bite size and put in boiling water.
  2. Cook until tender.
  3. Meanwhile, saute green peppers, onions, salt, cumin, basil, garlic and pepper in butter and olive oil.
  4. Add green chiles.
  5. Puree 1/2 of potatoes in processor and 1/2 saute in mixer.
  6. Add sour cream, milk, cheese, scallions and remainder of potatoes.
  7. This is a thick, milky soup.
