Potato Chili-Cheese Soup
- 5 large potatoes
- 1/2 cube butter
- 2 Tbsp. olive oil
- 3 large green peppers
- 3 large onions
- 1 tsp. salt
- 1 tsp. cumin
- 1 tsp. basil
- 2 cloves minced garlic
- dash of black pepper
- 1 c. diced canned green chiles
- 1 c. sour cream
- 2 c. milk
- 1 1/2 c. grated Cheddar cheese and Swiss
- 1 bunch scallions
- Clean potatoes; chop bite size and put in boiling water.
- Cook until tender.
- Meanwhile, saute green peppers, onions, salt, cumin, basil, garlic and pepper in butter and olive oil.
- Add green chiles.
- Puree 1/2 of potatoes in processor and 1/2 saute in mixer.
- Add sour cream, milk, cheese, scallions and remainder of potatoes.
- This is a thick, milky soup.
