Mushroom Quesadillas
- 1 large green bell pepper
- 1 large onion
- 1 lb sliced mushrooms
- grill seasoning, to taste
- 1 cup mozzarella cheese
- wheat flour tortilla
- cooking spray
- 1 -2 tablespoon butter or 1 -2 tablespoon margarine
- Slice onions and peppers.
- Fry onions, peppers and mushrooms in butter.
- I usually start the onions and peppers a little bit before I add the mushrooms as they take a little longer to cook.
- Add Grill Seasoning (Such as Montreal Steak seasoning by McCormick) to taste.
- Place peppers, onions and mushrooms on one half of one side of the tortilla.
- Add a handful of cheese.
- Fold tortilla in half.
- Heat another large skillet.
- Spray with cooking spray.
- Place folded tortilla in skillet on one side.
- Cook about a minute until golden brown.
- Carefully flip the tortilla to brown other side.
- Repeat with remaining tortillas and filling.
